Beef Stew Recipe

Servings: 6-8 servings


Ingredients: 

  • 3 lbs. beef stew meat, cubed into 1" chunks
  • 1 cup carrot, rough chopped
  • 1/2 cup onion, rough chopped
  • 2 medium potatoes, rough chopped
  • 2 cloves garlic, finely chopped
  • 12oz diced tomato
  • 1 cup broth (I like to use chicken)
  • 1 tbsp worcestershire sauce
  • 2 tsp freshly chopped sage
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • salt to taste
  • 1-2 tbsp olive oil for cooking

Directions: 

  1. Heat dutch oven over medium-high heat. Add in olive oil and let it come to temp. 
  2. Brown the stew meat. I prefer to do this in 1 lb batches so as not to overcrowd the pan. Remove each batch from the dutch oven when it is done browning. Add oils as needed, you don't want the meat to stick to the bottom of the dutch oven
  3. Add in the carrots, onion and garlic. Sauté for 4-5 minutes, just until the onions start to brown. 
  4. Add the meat back to the dutch oven, along with your tomatoes, broth, worcestershire sauce, sage, oregano, thyme and salt. Cover and let simmer over low heat for 90 minutes. 
  5. Remove the lid, add the potatoes and let the stew continue to simmer over low heat for an hour or until the potatoes are fully cooked and the sauce has thickened.
