Bacon and Egg Poppers

Ingredients: 

  • 12 eggs
  • 12 slices bacon, chopped into bits
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2oz sundried tomato, finely chopped
  • 3oz feta cheese
  • smoked paprika
  • dried oregano
  • salt
  • 2 tbsp olive oil for cooking

Directions: 

  1. Preheat oven to 400F. Oil muffin tin with oil of choice.
  2. In each well put bacon bits, onion, garlic and sun dried tomatoes.
  3. Crack on egg into each well.
  4. Sprinkle each poppers with feta cheese, smoked paprika, dried oregano and salt.
  5. Bake for 30 minutes or until egg is fully cooked through.
