Dark Chocolate Peanut Butter Protein Bars

Ingredients:

  • 3/4 cup peanut butter
  • 1 cup almond flour
  • 1/2 cup chia seeds
  • 4 scoops of preferred protein powder
  • 3 tbsp honey
  • 1/4-1/2 cup water
  • 8-10 chopped dates
  • 1 bar of dark chocolate, melted

Directions:

  1. In a medium bowl mix together the peanut butter, almond flour, chia seeds, protein poweder and honey.
  2. Slowly add in water, stirring consistently. Add enough water that the mixture comes together like a dough.
  3. Cover an 8x8 baking dish with parchment paper. Spread mixture evenly throughout pan and refrigerate for 1 hr.
  4. After the bars have firmed up, sprinkle chopped dates over the top then cover with melted dark chocolate. Return to fridge for 30 mins or until choclate has hardened.
  5. After the chocolate has hardened, slice block into 12 bars and enjoy! Bars should be refrigerated to keep their firmness.
