Mint Chocolate Chip Protein Balls

Servings: 6-7 servings (2 balls per serving)


Ingredients: 

  • 1 1/2 cup Oats
  • 1/2 cup Peanut Butter
  • 3 scoops Mint Chocolate Protein Powder OR 3 tbsp cocoa powder with 1 tsp min extract
  • 1/4 cup Chia Seeds
  • 2 tbsp Honey
  • 1/4 cup Water
  • 1/4 cup Dark Chocolate Chips (optional)

Directions: 

  1. In a medium bowl mix together all the ingredients. 
  2. Cover a baking sheet in parchment paper. Use your hands to form balls from the mixture, using about 2tbsp of "dough". Lay out the balls on the baking sheet. 
  3. Refrigerate for 2 hours while the balls firm up. 
  4. Remove from baking sheet and enjoy! You can store leftovers in the fridge for up to 2 weeks.
