No Bake Granola Bars

Ingredients:
- 2 cups quick oats
- 1/2 cup honey
- 1/2 cup nut butter
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 1/4- 1/2 cup dried fruit of choice
- 1/4 cup chocolate, melted for topping
Directions:
- In a medium bowl mix together the oats, cinnamon, vanilla extract and dried fruit. Set aside
- In a small sauce pan, over low heat, bring honey to a boil.
- Let the honey boil for 1 minute before mixing in nut butter. Stir continuously until nut butter is fully incorporated.
- Carefully add honey and nut butter mixture to oats. This is very hot, keep little hands away for this step.
- Mix all ingredients until a large sticky ball is formed, with all the oats coated by honey mixture.
- Line baking dish with parchment paper. Spread oat mixture over baking dish to desired thickness. Let the mixture sit in the fridge for at least one hour to set.
- After the granola bars have hardened, melt chocolate in a small microwave safe container and drizzle over the granola mixture. Allow 5-10 mins for chocolate to cool before slicing bars and serving!
