No Bake Granola Bars

Ingredients:

  • 2 cups quick oats
  • 1/2 cup honey
  • 1/2 cup nut butter
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4- 1/2 cup dried fruit of choice
  • 1/4 cup chocolate, melted for topping

Directions:

  1. In a medium bowl mix together the oats, cinnamon, vanilla extract and dried fruit. Set aside
  2. In a small sauce pan, over low heat, bring honey to a boil.
  3. Let the honey boil for 1 minute before mixing in nut butter. Stir continuously until nut butter is fully incorporated.
  4. Carefully add honey and nut butter mixture to oats. This is very hot, keep little hands away for this step.
  5. Mix all ingredients until a large sticky ball is formed, with all the oats coated by honey mixture.
  6. Line baking dish with parchment paper. Spread oat mixture over baking dish to desired thickness. Let the mixture sit in the fridge for at least one hour to set.
  7. After the granola bars have hardened, melt chocolate in a small microwave safe container and drizzle over the granola mixture. Allow 5-10 mins for chocolate to cool before slicing bars and serving!
